For nursing moms whose babies are sensitive to or allergic to milk and soy proteins.
Black Bean Salsa Relish
½ cup black beans (from a can, rinsed & drained)
½ cup corn niblets (from a can, drained)
¼ cup diced cherry tomatoes
¼ cup finely diced onion (red, spring, or mix)
¼ cup fresh cilantro leaves, minced
1. Prepare the ingredients when you have time throughout the day.
2. Put all ingredients into a bowl and stir together.
3. Can be used as a relish on the side of baked chicken or fish, as a light side dish, or with cold prepared linguini as a pasta salad.
