Herbed Veggies with Orzo


¼ cup olive oil
¼ tsp. dried minced garlic
1 yellow pepper, sliced (or any sweet bell pepper)
½ pint Baby Bella mushrooms, sliced
½ tsp. dried thyme
salt & pepper to taste

1 cup cooked orzo noodles


1. Put olive oil and garlic in medium saucepan on stove. Heat on medium flame until garlic just begins to brown.

2. Add sliced peppers, mushrooms, thyme, salt and pepper. Stir to coat.

3. Saute herbed vegetables until soft.

4. Pour veggies, garlic and oil over cooked orzo noodles. Stir and let sit about 5 minutes to allow flavor to absorb into noodles.

5. Serve warm. Enjoy!
