Nursing Mom Recipes
For nursing moms whose babies are sensitive to or allergic to milk and soy proteins.
This easy side dish recipe can be made with any variety of vegetables. The ones listed below are a mere "base" recipe that you can adapt to suit your tastes.
1 red pepper, cut into 1-inch pieces
1 yellow pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
10 baby red potatoes, quartered
2 large tomatoes, cut into 8 wedges each
1/2 cup olive oil
salt and pepper to taste
herbs (paprika/tarragon/thyme/oregano/parsley work well)
1. Put cut veggies into medium baking dish.
2. Drizzle with olive oil.
3. Add herbs to taste.
4. Mix veggies with oil and herbs.
5. Bake in oven at 350 degrees for half an hour.
